Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Cheatin’ Game Day Veggie Chile!

I call this cheatin' chile because the Madras Lentils from Costco make it almost taste like meaty chile and help it come together very quickly. If you don't have them it'll still be good, but if you can get them, YUM. Vegetarian but even carnivorous friends will think you have meat in it!

The Ultimate Macaroni, Cheese, & Ham Casserole

Not exactly healthy food but certainly a delicious upgrade on the classic. Chunks of sharp cheddar mis with creamy mayo, sour cream, salty ham, and of course elbow macaronis to make a savory dish that works as a meal every now and then. Serve with a side salad to balance the meal.

Easy Yummy Shortbread Cookies

Another recipe given to me years ago... these are a Valentine's day favorite when I make them with heart-shaped cookie cutters and dip half of each heart in chocolate. Mmm.

I LOVE this recipe inspired years ago by a trip to the farmer's market. You can use any combo of veggies of course, but this is particularly yummy. If you are gluten free, skip the crust and just make the egg filling. This lasts for up to a week in the fridge, reheats easily, and is my favorite dish to serve my Veggie friends on holidays.

Sometimes the angels give me the strangest recipes but they are so good! This mix of fruits, veggies, grains, and beans is a whole meal or a great side dish and can be eaten warm or cold. My friends love it and always ask for more!

Roasted Eggplant Lasagna

This yummy veggie fake lasagne skips the noodles and uses eggplant strips instead. It doesn't exactly keep its nice square form once served, but it tastes delicious!

Greek Omelette

Keep some feta, sun dried tomatoes, and kalamata olives in the fridge for when you need a quick, easy, and delicious meal. One of my favorite omelettes!

Coconut Rice and Delightful Veggie Curry

Even if you don't like curry, try the coconut rice. SO good steeped in coconut milk rather than water and jazzed up with some shredded coconut at the end! I'd eat curry anytime but served over this rice its a trip to paradise.

Not Your Mother’s Indian Korma

My mom is not Indian, but if she was I am sure she would not make Korma this way. It is an Indian-inspired dish with a great cream sauce over veggies and nuts - spicy and a tiny bit sweet. I ran out of cream so I used coconut milk as well. This feeds a family of six plus leftovers, or ME and a bunch of friends :)

Moussaka is a traditional greek dish that usually has a meat filling and a potato topping. I've made up a veggie version that is both gluten and dairy free and yet packed with flavor! Not exactly fast food so save it for a Sunday supper.
