Grains, Greens, Veggies and Beans Salad
Mixed greens – a good handful for whatever serving size you like
1/4 c leftover cooked wild rice
1/4 c black beans
1/4 c cherry tomatoes, cut in half
1/2 a cucumber, seeded and chopped
1/4 c blue cheese crumbles
1/4 c chopped walnuts
balsalmic vinegar
good olive oil
salt and pepper
Toss the greens, grains, beans, cherry tomatoes, cucumbers, blue cheese, and walnuts. Drizzle with, balsamic vinegar and olive oil to taste. Add salt and pepper as desired.
