Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Homemade Taco Seasoning

I make a big batch of this spice mixture and keep it around, not only for delicious tacos, but also for flavoring veggies, beans, etc. It is more flavorful than the packaged kind and has no preservatives.

Springtime Mediterranean Tuna Salad

Skip the mayo and combine tuna with rice, spinach, tomatoes, and a simply drizzle of olive oil for a healthy twist on this easy sandwich favorite. Or serve it over a bed of spinach with some additional sliced tomatoes and cucumbers on the side for a super summer supper.

The World’s Best (aka Mom’s!) Spiral Cinnamon Coffee Cake

When my mother made this coffee cake, we were in heaven! We begged for it as children, and it never lasted long. We could not wait to un-spiral the buttery, sugary, cinnamony pieces and let them melt in our mouths. Ooh, Mm, Mm, Good! I once commented to my mom how much I missed it and she baked one, wrapped it in foil and fed-ex'd it to me over night. Oh heaven!

Creamy Dairy-free Califlower soup

This is admittedly weird, because I usually use milk in my creamy soups, but I was out and wanted soup anyway, so I got crative. It worked! It is a bit garlicky, but I love garlic!
