Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

A very simple veggie and olive oil topping goes over spaghetti squash for vegetarian fast food! Even quicker if you cook up the squash before and have it waiting to go in the fridge. A dusting of ground flax seed substitutes for parmesan and tastes remarkably good.

This is not my recipe and I do not remember who gave it to me years ago, but it is insanely delicious! Very good for breakfast during the decadant holiday season and they disappear fast if you have company :)

Leftover Turkey Tortilla Soup

I always cook a huge turkey for thanksgiving - the kind that requires weight lifting to build up muscle before the big day! Needless to say I have to find creative ways to use up the leftovers. This is one more version of one of my favorite soups. Use chicken if you don't have turkey or just make a veggie version. Any way you make it, its delicious!
