Easy Citrus Ginger Fish

After a season of indulgence, easy healthy meals sound good to me! Enjoy this very simple fish that cooks up in a flash!

1 c orange juice
1/4 c honey
1 (1/2-inch) ginger root, chopped very fine
3 T slivered or sliced almonds or macadamia nuts
4 servings thick white fish
3T butter

Mix orange juice, honey, and ginger root, and let sit at room temperature for a half hour or so to meld flavors, or you can put it in the fridge overnight.

Let the fish sit out for about 20 minutes to come to room temperature too.

Melt butter in a large skillet over medium high. If you don’t have a large enough skillet, divide ingredients up and cook in two batches. Place the fish in the pan and let cook till you see it turn white on the sides and start to creep around to the top (Just a few minutes). Flip fish and cook one more minute (if really thick, try two minutes), then take off heat and allow it to finish cooking. While the fish is cooking for the last minute add the nuts to brown in the butter. You’ll know the fish is done when it is white through and flakes easily with a fork.

Pour sauce in the pan and let residual heat warm it. Serve immediately. Great with brown rice, or quinoa and a side salad with sliced oranges.
