Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Once, after being somewhat under the weather I started to crave something warm and comforting and this crazy, easy idea popped into my head. So easy its ridiculous and at the same time so soothing.

One fourth of July my body wanted veggies and my mind wanted a burger and these delicious portobello burgers satisfied both needs very well! Served with pesto, grilled eggplant slices, and roasted red peppers, they are a vegetarian delight!

Easy Shrimp & Vegetable Curry

I have never met a curry I didn't like! Carrots, potatoes, onions, mushrooms, snap peas, chick peas, shrimp or chicken and a delicious yellow curry sauce are comfort food at its best.

Almost Raw, Super Easy Banana Pudding

This couldn't be easier. Mix a few ingredients in the blender and chill. call it "almost raw" because the vanilla extract is probably heated. If you're a raw purist, get a vanilla pod and scrape the insides into the blender instead. It isn't as pretty as cooked banana pudding - it turns brown instead of yellow, so if you serve to company, you might want to garnish it a bit or load it up with whipped cream! Nonetheless, it is yummy and oh so healthy!

Kale Pesto

This version of kale pesto is simple, nutritious and not nearly as expensive as its traditional counterpart. Mix with mayo for a great sandwich spread or use on cooked veggies. Very versatile. Best eaten within a few days.

Healthy Shaved Greens Salad

I tried something similar in a salad bar and had to go home and tinker with a homemade version. Raw shaved brussell sprouts may sound odd but they are crunchy and delicious. Its like a slaw only somewhat sweeter and more delicately crunchy.
