Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Barley and Roasted Veggie Salad

Packed with goodness, barley combines with roasted broccoli and portobello mushrooms for a harvest style grain dish that is just mouth watering good. The dressing is a slightly sweet/savory combo of soy sauce, balsamic, optionally sherry, and a little olive oil. SO yummy!

Moroccan Inspired Quinoa

Quinoa is just plain good for you. But when you add spices like curry, cinnamon, and cloves, and mix in a little sweet and salty too with almonds and raisins, the it is elevated into the realms of international delights!

Kale Basil Pesto

Much less expensive than pure basil pesto, packed with nutrients, and still full of flavor, this pesto is a favorite in my house. It is great alone, as a dip, and positively delicious on sandwiches when mixed with a little mayonnaise. Yum!

White Bean Salad

This Greek style white bean salad with cherry tomatoes, cucumbers, feta, olives and a delicious lemon juice, olive oil dressing will help you imagine yourself overlooking the Mediterranean on a warm summer day.

Crazy Creamy Citrus Vinaigrette

I call this crazy because I kept dumping herbs into it and it tastes good! I use it on salads, sturdy greens like rainbow chard leaves sliced up, and it is really good on asparagus. I imagine it would make a great marinade for chicken too.

Tyler Florence’s Cracked Earth Flourless Chocolate Cake

When my body decided I needed to be gluten free, this dessert practically begged me to try it. So amazingly good you will never miss the flour. It is just sweet enough without being overbearing and when paired with fresh whipped cream and a drizzle of dulce de leche, it is simply delightful!

Gluten Free Champagne Flaxseed Gravy

While nothing beats the taste of gravy made the good old fashioned way, my body is not permitting me to eat flour this year, so I came up with this healthy alternative version. It is slightly grainy, and tastes like a hint of flax, but other than that it is delicious. It tastes really good after a few days in the refrigerator so I like to make it ahead and reheat it when I use it.

Ann’s Sweet Potato Casserole

'm not sure if this is a side dish or dessert, but it sure is good and makes a lot of yummy leftovers! My friends love it every year. Filled with good for you pumpkin, and fluffy due to the eggs, this tastes somewhat like pumpkin pie with a pecan crust. Yum!

Mom’s Delicious Pumpkin Pie

This is a family favorite. Although you can used canned pumpkin, I buy pumpkins for Halloween, and rather than carving them I leave them whole, then cook and freeze them for use in this Thanksgiving favorite. My friends have been known to take home leftovers and eat it for breakfast. Delicious with whipped cream!

Creamy Mashed Potatoes

Only once a year would I eat mashed potatoes with this much butter and cream, but oh my goodness, they are smooth, creamy, buttery, and delicious!

Raspberry Vinaigrette Dressing

This recipe was given to me by a friend years ago and is now another holiday favorite. I have to make a double batch and bottle some up every year to send home with friends. It tastes terrfic on almost any kind of salad. We usually mix greens, tomatoes, avocados, carrots, sunflower seeds, and whatever else looks yummy!
