I call this cheatin' chile because the Madras Lentils from Costco make it almost taste like meaty chile and help it come together very quickly. If you don't have them it'll still be good, but if you can get them, YUM. Vegetarian but even carnivorous friends will think you have meat in it!

I LOVE this recipe inspired years ago by a trip to the farmer's market. You can use any combo of veggies of course, but this is particularly yummy. If you are gluten free, skip the crust and just make the egg filling. This lasts for up to a week in the fridge, reheats easily, and is my favorite dish to serve my Veggie friends on holidays.
