Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Beef, Bean, Garlic, and Basil Stew

This is adapted from a recipe given to me years ago and its is so packed full of garlic and hearty flavors that I am in heaven eating it. The beef and spinach give you a good dose of healthy iron too.

Easy Hummus

One of my favorite snack foods. I rarely measure, but tried once so I could share this! I love hummus with sliced red bell peppers, and especially scooped into baby endive leaves, drizzled with olive oil and sprinkled with smoked paprika. Healthy snacking!

Moroccan Inspired Sweet and Savory Chicken

I have a lemon tree that gives me so many lemons each year I finally started preserving them. The jars of salt packed lemons in the fridge inspired this sweet, salty, savory dish that I love so much! Using quinoa instead of couscous makes it gluten free and adds nutrition without sacrificing the intent!

Ann’s Pesto Chicken Pizza

Chicken, pesto, tomatoes two ways, kalamata olives, and feta and store bought pizza crust make this a quick and easy gourmet delight! Your friends will thank you!

Tabbouleh

I first had Tabbouleh when a friend made it. Her lebanese husband inspired many wonderful meals! This is just one version of the classic. Great when served with toasted pita chips dipped in hummus!

Easy Grain Salad

Onion, zucchini, and pepper mix with nutritious quinoa with a light lemon and olive oil dressing. Healthy, simple, and flavorful.
