Incredible Red Lentil Dahl
3 tablespoons butter or olive oil
2 teaspoons cumin
1/2 teaspoon ginger
1 1/2 teaspoons coriander
1 teaspoon mustard seeds
2 teaspoons curry powder
1/8 teaspoon cayenne
1 1/2 teaspoons salt
8 cups water
2 cups red lentils, dry
1/3 cup + 2 T lemon juice
2 teaspoons honey
This was given to me by a friend and has become one of my staple comfort foods. Yum!
Directions:
In a large saucepan, heat the butter then add the spices and salt. Allow it to simmer briefly. Add the water and bring the mixture to a boil. Meanwhile, wash the lentils and then add to boiling water along with the lemon juice and honey. Cook over a low flame for one hour, stirring frequently. Makes 6 cups. Freezes well.
