Cooking is one of my deep joys. The food I eat has changed over the years. I’ve gone off gluten, eat very little processed sugar, and have been eating “clean” for the most part. While that may sound like depravation to some, I see it as a creative challenge! Unwilling to give up flavor, I’ve come to love the taste of fresh natural foods, vibrant spices, healthy oils, and herbs galore.

Enjoy conventional recipes from my eat-everything days, vegetarian recipes from those seasons of my life, and a lot of really healthy, fun recipes that taste better than you’d believe, given how nutritious they really are!

Thai-style Crockpot Lemongrass Chicken

I was delighted when I stopped at a yard sale and the gentleman was selling lemon grass stalks! I am now blessed with a huge lemongrass plant in the backyard. It imparts a delightful subtle flavor to the chicken.

Ann’s Grilled Summer Corn Salad

This is one of my favorite summer salads. Grilling corn and onions makes them sweet and delicious. When mixed with a balsamic vinaigrette, black beans, and cilantro, oh heaven! Bring it to a summer barbecue or potluck and it will disappear quickly.

Ann’s Curried Chicken Salad

A trip to a gourmet salad bar inspired this dish and it has become something I make over and over. Great on croissants, gourmet breads, or over a spinach salad with an extra drizzle of olive oil. Almonds, raisins, chicken, and curry combine to give you a big burst of flavor!
