Carrot ginger soup is an autumn staple around here, but we've snuck in a little extra nutrition with greek yogurt and tofu. Only slightly creamy and packed with flavor. They'll never know :)

This is a great post-holiday soup. It can be made with chicken, turkey, or you can leave out the meat for a vegetarian version. The roasted vegetables add sweetness and when paired with the wild rice, you have the Autumn harvest in a bowl!
