Much less expensive than pure basil pesto, packed with nutrients, and still full of flavor, this pesto is a favorite in my house. It is great alone, as a dip, and positively delicious on sandwiches when mixed with a little mayonnaise. Yum!
I wanted pesto but didn't have enough basil one day so a quick look in the fridge gave me this yummy little idea. I love this served so many ways... try it over beans, veggies, on sandwiches, etc...
This version of kale pesto is simple, nutritious and not nearly as expensive as its traditional counterpart. Mix with mayo for a great sandwich spread or use on cooked veggies. Very versatile. Best eaten within a few days.
