The Ultimate Macaroni, Cheese, & Ham Casserole

Not exactly healthy food but certainly a delicious upgrade on the classic. Chunks of sharp cheddar mis with creamy mayo, sour cream, salty ham, and of course elbow macaronis to make a savory dish that works as a meal every now and then. Serve with a side salad to balance the meal.

Spaghetti Squash with Easy Veggie Topping

A very simple veggie and olive oil topping goes over spaghetti squash for vegetarian fast food! Even quicker if you cook up the squash before and have it waiting to go in the fridge. A dusting of ground flax seed substitutes for parmesan and tastes remarkably good.

Sweet Sausage and Veggie Penne Pasta

I LOVE this dish. the mix of sweet sausage and veggies with savory spices is so good! Since I'm gluten free at the moment, I serve it over "zucchini noodles" (made with a spiral slicer) , spahgetti squash, or simply as is in a nice deep bowl!

Ravioli in a Pumpkin, Butter, and Balsamic Sauce

This was beyond good and takes less than fifteen minutes to make! I do not have a clue who or what is giving me weird recipe ideas or if its coming out of my own brain but I would have never thought to combine these ingredients till I looked in the pantry and saw the ravioli and abundance of pumpkin I had leftover from my halloween pumpkin! Try it... its really yummy

Spaghetti Squash Marinara

A fresh, quick, and easy tomato sauce served over spaghetti squash noodles and dusted with a touch of parmesan is a vegetarian delight. If you are vegan, substitute ground flax for the parmesan.
