Ann’s Vegetarian Quiche

I LOVE this recipe inspired years ago by a trip to the farmer's market. You can use any combo of veggies of course, but this is particularly yummy. If you are gluten free, skip the crust and just make the egg filling. This lasts for up to a week in the fridge, reheats easily, and is my favorite dish to serve my Veggie friends on holidays.

Greek Omelette

Keep some feta, sun dried tomatoes, and kalamata olives in the fridge for when you need a quick, easy, and delicious meal. One of my favorite omelettes!
