Curried Veggies & Rice

My wonderful hairdresser Tricia Royall served me a dish with cauliflower, curry, and chickpeas. I fell in love with it, so of course I had to go home and make my own version! Its light, summery, healthy, and flavorful! If you want to add a kick, serve with a little chile sauce added in.

Easy Shrimp & Vegetable Curry

I have never met a curry I didn't like! Carrots, potatoes, onions, mushrooms, snap peas, chick peas, shrimp or chicken and a delicious yellow curry sauce are comfort food at its best.

Coconut Rice and Delightful Veggie Curry

Even if you don't like curry, try the coconut rice. SO good steeped in coconut milk rather than water and jazzed up with some shredded coconut at the end! I'd eat curry anytime but served over this rice its a trip to paradise.

Vegetarian Curry

This was a hit with friends of mine! It takes time but is worth the effort and lasts well in the fridge. Curry paste and coconut milk make a wonderful base for a combination of veggies, meat, and beans.
